
Super-Quick Soba Noodles with Tofu Tomato Sauce
This super easy recipe is by Philipp Ertl of Exceedingly Vegan fame. An excellent website full of vegan recipes, tips, eating out and travel guides plus vegan products and a new range of tahini dressings. When you are in the rush but still don't want to compromise on quality and taste then this fusion recipe is perfect, Mediterranean flavours working well with gluten-free soba noodles. Who would have thought?

Ingredients
- 3 large ripe tomatoes
- 1/2 tsp garlic powder
- 1 tsp good quality extra virgin olive oil
- 3/4 tsp sea salt
- 1/2 tsp oregano
Other ingredients:
- Soba noodles
- 200g / 7 oz tofu, well-pressed
- 1/2 tsp smoked paprika powder
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Oil for frying
- Some gluten-free flour (or any flour you have at home)
Method
- Cook the soba noodles in boiling, slightly salted water for 5 minutes and then drain.
- Cut the tofu block into small cubes and put them into a bowl. In the bowl season the tofu with salt, pepper. 1/2 tsp garlic powder, 1/2 tsp smoked paprika powder and then mix in some flour (this will help to lock in the flavour). Now put the tofu cubes into a pan and fry in some oil until they brown on all sides.
- Roughly chop up the tomatoes and add them and all other ingredients into a food processor. Blend until you get a smooth tomato sauce.
- Distribute the soba noodles in bowls, pour over the tomato sauce and top with tofu cubes. Serve with an optional green salad.
