
Tofu and Walnut Balls
These little protein rich balls of deliciousness are a terrific all rounder. You can have them in a tomato sauce with pasta, as a festive side dish with cranberry sauce or as a picnic treat. As an extra plus, they are so easy to make you’ll be tucking into them before they reach the fridge.

Ingredients
- 1 block tofu (400g / 14oz) – well-pressed
- 1 tsp coconut oil
- 1 onion – finely diced
- 1 tsp garlic powder
- 4 slices wholemeal bread
- 2 cups walnuts – roughly chopped
- 4 tsp oregano
- 2 tsps red miso paste
- 2 tbsp cornflour
- Salt and pepper
Method
- Preheat the oven to 180C/360F
- Gently fry the diced onion and garlic powder in the coconut oil until the onion is starting to brown.
- Drain and crumble the pressed tofu into a blender and add the fried onion, torn up bread slices, chopped walnuts, oregano, miso paste, cornflour and salt and pepper. Blitz until well combined.
- Transfer the mixture into a bowl and form it into balls about 2cm/1" in diameter using your hands. Alternatively, you can make larger patties and flatten them down to resemble mini-burgers. Place them onto a slightly oiled baking tray and bake for 20 minutes at 180C/350F, turning once during cooking. The balls should be golden brown in appearance. Serve with your chosen dish or refrigerate until ready to use.
